Recipe: Chicken Parmesan

This is one of my go to dishes when I’m wanting to kick spaghetti up a notch!

This recipe makes for 4 people.

4 Boneless Skinless Chicken Breast
1 Jar of favorite spaghetti sauce or homemade is better!
1 box of noodles
2 cups bread crumbs
2 eggs
2 cups flour

Heat a large skillet with EVOO. Mix 2 eggs with 1/4 cup of water to make a egg wash. Drop each chicken breast into the flour, cover with egg wash and then cover with bread crumbs on all sides. Place chicken breasts into hot skillet and cook 3-5 minutes on each side. You are simply browning the chicken breasts.

Heat oven to 350 and place chicken into oven. Let the chicken continue to cook through for about 15-20 minutes, until clear liquids run when cut.

Heat up spaghetti sauce.

While the chicken is cooking, boil water with a few sprinkles of salt. The salt helps the noodles not stick together while they are cooking. It also allows the spaghetti sauce to stick to the noodles once dinner is plated. If you use oil, the spaghetti sauce will tend to run off the noodles. Once the noodles are cooked, drain.

To plate, place noodles, add spaghetti sauce, place chicken, add a little spaghetti sauce to chicken. You can also add mozzarella cheese to make the dish extra special! Serve with salad and garlic bread!

    I was just sitting here wondering what the heck to fix for dinner tonight. I have some Italian seasoned chicken boobs (bought on managers special a couple weeks ago!!) in the freezer & everything else. Thanks Marci!! Will you come do clean up too?! lol Love ya!
